Jim Ruddell
was fascinated by the process of smoked foods and its origins for many
years. With the help of his wife, Kathy, he spent a lot of time researching
and tracking down the purest of ingredients for the seasoning in his
recipes. They also visited as many smokehouse restaurants as they could
find. After taste-testing dozens of smoked food items and dishes, and
comparing them to his own recipes to determine how they measured up,
they never found anything better!
Jim decided this California coast location was the perfect spot for
establishing his business, primarily because he had such ready access
to an abundance of fresh fish, caught right here in local waters.
As word spread about his talent, he became known locally as "Smoker"
Jim.
As his reputation grew, along with the demand for his fine smoked
foods, it became apparent they needed to open their own smokehouse.
