Smoked Fish Quiche
2 egg yolks • 2 whole eggs • 3/4 cup milk • 1/2 cup heavy cream
1 1/4 cups smoked slmon or other smoked fish
Salt • Freshly ground pepper • One 9" partially baked pie shell

Directions
1. Beat the yolks and eggs with the milk and cream until blended.

2. Stir in the salmon, and add salt and pepper to taste.

3. Turn into the partially baked pie shell, and bake in preheated 350-degree oven for 35-40 minutes, or until set.

4. Let rest at least 10 minutes before serving. Serves: 6-8
